Ingredients:
- 100 g (about 10-12 )shiitake mushrooms, sliced
- 1 tsp light colored soy sauce
- 1 T minced garlic
- 1 T avocado oil
- 3 Pak Choi
Instructions:
Pull apart the leaves of the pak choi and wash thoroughly.
In a skillet or wok heat the avocado oil over medium heat. Once the oil is shimmering, add the garlic. Stir constantly for 1 minute to allow the oil to infuse with the garlic.
Add the mushrooms and stir constantly. The mushrooms will quickly soak up the oil. Add 2 T of water and soy sauce to the pan, continue to stir the mushrooms. Saute for about 5 minutes, until the mushrooms are soft.
Meanwhile place water in a steamer or set up a bamboo steamer. Place the pak choi into the steamer and steam for about 3 -5 minutes, until the pak choi turns bright green and is tender with a little crunch left to it.
Toss the mushrooms, garlic, and any juice from the mushroom pan with the pak choi and serve.
