1/4 cup balsamic vinegar
2 teaspoons honey
1 tablespoon finely minced garlic
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
3/4 cup extra virgin olive oil
5 cups mixed greens
1 cup sliced strawberries
1/4 cup chopped walnuts
First, make the dressing so the flavors have a chance to meld. Beat the vinegar in a bowl with one teaspoon of honey, garlic, salt, and pepper until honey and salt dissolve. Then beat in the oil, whisking constantly. (Or place all the ingredients in a screw-top jar and shake to combine.) Taste and add another teaspoon of honey if the flavor is too perky for your taste. This recipe will make more dressing than you need for the salad, but it’s so wonderful on almost any salad, you’ll find yourself reaching for it again soon.
Next, time to put the salad together. Warm walnuts on low-medium heat in a pan just until they start to smell roasty. Be careful not to burn them, it’s easy to do!
In a large bowl, gently mix all of the ingredients above. Dress lightly with balsamic vinaigrette. and serve right away.
